The first stop on our week in eastern NC where we will go hog wild was Wilber's Barbecue just three miles away from us here in Goldsboro. Wilber's is one of the biggest names in barbecue in eastern NC. This is one of only a handful of places around these parts where the 'cue is cooked entirely over hardwood coals. Lots of other restaurants have given up the old, slow ways of cooking and have gotten rid of the wood, pits, smoke, shovels, and the labor intensive method of cooking. |
He took us inside the pit and showed us the pork butts, shoulders, and ribs that he had cooking. The smell was off the charts, but so was the heat...about 400 degrees to be exact!
