After we got our chicken pies in the Dutch ovens, we took a break and walked with Joanne over to the garden where we met Curt, the gardener. He talked with us about gardening practices in the 18th-century and pointed out what was growing in the various rows he had planted. Back in the kitchen, it was time to make the salad with a mustard dressing. The lettuce we would use was picked fresh from the garden that morning. Leslie had it waiting for us in a bucket of cold water to crisp it up even further. I really appreciate you dropping by today for the "green" edition of my special Hearth Cooking Postcards.
